Puri Wale Alu

Ingredients

  • 3 tbsp olive oil
  • 1/4 tsp Cumin Seed (whole)
  • 2 Red Chili broken in half
  • 1/2 tsp Turmeric (powder)
  • 1 lb Potato cubed
  • 2 Tomato skinned and chopped
  • Pinch Hing (Asafetida) in 1.5 cups water
  • 2/3 cup Dhai (Yogurt)
  • pinch Black Salt
  • 2 tsp Salt
  • 1 tsp Cumin Seed (ground)
  • 1/2 tsp Ginger (ground)
  • Corriander Leaves (Cilantro/Dhania)

Instructions

  • Heat the oil and fry the cumin seeds until the splutter.
  • add the red chili, turmeric, potatoes and saute for 2 minutes.
  • Add the tomatoes and hing waster and cook for 5 minutes.
  • Add yogurt and simmer until gravy is creamy.
  • Add the two salts and stir.

Serve

  • Sprinkle with ground cumin, ground ginger, and coriander leaves.
